The Duncan 802 Posted April 14, 2012 Report Share Posted April 14, 2012 Wifeys new favourite meal This is one of those recipes that I never weigh things out with, but fine tune as I go. But generally, you will need; 20 pigeon breasts, minced frozen minced beef approx half the quantity of minced pigeon breast, salt, pepper, mixed herbs, black cajun spice or chilli powder, onions (very finely chopped) garlic (grated) 2 slices of toast (grated for breadcrumbs) Place all ingredients in a large mixing bowl and get your hands dirty! Make sure the mixture is thoroughly mixed as no-one wants a mouthfull of onion or chilli powder! Shape into burgers (I use a cookie cutter and make them about 3/4 inch deep). Place on trays, covered in the fridge to allow to firm up and the flavours to infuse. I like to leave them in the fridge for at least an hour. Grill slowly to make sure they are thoroughly cooked and turn up the grill towards the end of cooking to caramelise the outside of the burgers. Enjoy! They go great in a roll with some grated mature cheddar and bbq sauce, or with coleslaw and chunky chips etc. 1 Quote Link to post Share on other sites
