remi700 99 Posted March 31, 2012 Report Share Posted March 31, 2012 I got an old coca cola drinks fridge from a shop. Usually joint the carcasses, take front legs and neck off 3 ribs up. I dont bother with hanging this as it goes straight to the mincer. Split the rest of the carcass in 2 between the back of the sirloins and the back legs and hang up in the fridge.
