Not sure that is always the case but as you say bitches are less common and can make more money.

Its very rare to see dog pups dearer in any breeds than bitches.Bitches usually go first figure it out.

only ever bred one litter [blue staffs] 5 dogs 2 bitches , expected to sell bitch first and possibly struggle with so many dog pups,the exact opposite happened .not one request for a bitch but could have sold the dogs ten times over.
