I tried rabbit meat only burgers and they weren't that nice. The fat in the pork bellies goes crispy too mmmmm! Good when you add some fresh herbs in and perhaps a few dried chilli flakes too, inevitably some finely sliced onion, or shallot if they're available. Quote Link to post Share on other sites

trigger2 3,152 Posted February 8, 2012 Report Share Posted February 8, 2012 i always do different burgers some 50% rabbit 50% sausage meat and leave them like that just plain old burgers. i do some 75% 25% etc etc. i add onions mixed herbs and a little black peppercorns. i only weigh the meat each time just add whatever i think with the herbs onions and black pepper. i always put the onions through the mincer. i make hare burgers and venison burgers at times aswell. imo there good quality healthy burgers.
