Depends on the temperature of the place you're hanging it, and how strong you want the meat to be. If it's in a properly refrigerated chiller at between 3 and 5 degrees, then a few weeks isn't too long, though a few days is better. If it's bunged in the garage/shed, where the temp is going to be more like 10 degrees, then a couple of days is probably enough, absolute max of four days. If it's warmer than that then the meat can go bad in a couple of days.

Clean the deer out properly and then hang in a chilled area of not more than 7 deg normally for a young roe i leave for 7 - 10 days for a older beast 14 days should get him tender enough. Anything a bove 7 deg i would only leave till the animal was coll then i would butcher and freeze the freezing effect will brake down the muscle to some extent and the meat will be ok. If you leave it to long in teps abouve 7 it will start to go off and trust me it will not take long at all.

Hardly worth the bother. Enough is know by that many people now following the "stolen" high seat fiasco being so well publicised around the various shooting forums. That it would be a forgone conclusion what the result would be. :yes:

 

Besides apart from a select few, I'm more interested in the views and opinions of those who are in the can't be bother category. ;) For reasons already noted

lads could anyone tell me how long i leave a dear hang for ?

 

10 days approx in a clean and fly free environment at 4 deg minimum to no greater than 7 deg or it will spoil

 

preferably in a room that has constant changes of air either mechanical or natural
