I and my little family eat them pretty frequently. Have nearly exhausted all the recipes i can find. One female we had tasted sweet and hazelnutty. Yummy! Oh and yes, they are a bitch to skin. You need a good Sharp knife and a strong pull.

had it a few times spit rosted over a fire when i was a lad on our summer holiday hunting /camping forays in the local woods it was nice but not as nice as woody done the same way but much better than gudgeon!.. its the only animal that i cant seem to reverse the damage done to my wife by walt disney . :hmm:

I just remove the back legs, there's not much meat anywhere else anyway. I skin the legs on the squirrel, cut through the hip joint and pull the feet off with pliers to remove the tendons.

 

I've always thought they'd be good covered in breadcrumbs like KFC! (not got round to trying it yet though).
