pigeon recipies?

just wondering what your favorate ways of cooking pigeon are? i breast them antd fry in a really hot pan with salt and pepper then slap on a bread bun :good: mmmmm pigeon buttys!!

was wondering what you lot do, as im sure there plenty of other prbably tastyer ways to cook it?

Often, simple is best:

fave lunch is marinaded pigeon breast (redwine vinegar, salt, black pepper, flaked chillis, chinese five spice, garlic and a dash of balsamic), fried in hot pan, 2 mins a side, rest for 2 more in a warm place and place in crusty rolls with butter, some cucumber thinly sliced and a smidge of mayonnaise on top.

IMHO, very hard to beat :)

season and fry breast quickly but not fully, take out of the pan and put to one side boil some cubed potatoes then fry the cubes, add choritzo sausage and onions keep mixing when potatoes and choritzo are nearly done slice pigeon and add to pan, you can also fry an egg or poach (which i prefer) to put on top YUMMY!!!! you can even eat it out of the pan

Can't beat simply frying in butter bit of salt and pepper then straight onto toast takes literally 3 mins.....

 

However my missus made an awesome pie this weekend, don't ask me the ingredients but it was the nuts...wives are good for some things!!!
