sussexpoacher 45 Posted May 25, 2011 Report Share Posted May 25, 2011 20 Elderflower heads 1 sliced lemon 2 tsp citric acid 1.5 kg sugar 1.2 litres of boiling water Fill a bowl or bucket with ingredients, pour boiling water over and stir till sugar and citric acid dissolve, skim off any scum, cover with a cloth. stir twice a day for 5 days. strain through a fine sieve or muslin, pour into sterile screw top bottles keep in fridge for upto a month, or freeze in plastic bottles to keep longer, pour into a glass, dilute to taste, sit in garden/shed or similar peacefull place and ENJOY. Enjoy is the correct word, its cracking stuff. We make some every year when the flowers start to go yellowish. We do it slightly differently though: We simmer it all in a pan for 20 mins then strain it, before setting aside for 5 days. Same result though, an awesome refreshing drink that lasts all year when frozen! We gave some as Christmas presents and it went down a treat. Try it: Hot with some elderberry jam, honey and a drop of lemon juice. Great for warding off the sniffles in winter; In a cheesecake; On a fruit salad; As a mixer. A truly versatile little cordial. sussexpoacher 45 Posted May 26, 2011 Author Report Share Posted May 26, 2011 my missus makes a herbal tea with elderflowers, lemon juice and other things, its great if you have a chesty cough as it clears and loosens the grot n snot. the elderflowers are a nice little earner where we live as Belvoir fruit juices pay resonable money for fresh flowers, you just have to be quicker out of bed than the polskis. Has your Wife got the recipe for the herbal tea? We made some last year. We just dried out the leaves first, then you can store them when they're bone dry and crumbly. In a cup: 1 tbsp dried leaves; 1 tsp honey; dash of lemon juice (or a slice of lemon); 1 tsp sugar (optional); boiling water. Quote Link to post Share on other sites
