I don't bother with measures or times: I like a haphazard kitchen (?!) = chopped apples in a pan with a big nob of butter, 1 tsp cinnamon, 1 cup sultanas (optional) = sweat them until the chunks get a bit squidgy. turn them off the heat. = make pastry in big bowl: flour, butter/marge, sugar, cardamom seeds. (more flour if too wet, more marge if too dry). = halve the pastry and roll it into a big circle. = Pop it in a greased tin as the pie base. Make sure it's big enough to come just over the sides of the tin. = blind bake it until it is crisp (gas 5-6) = Roll the rest of the pastry to use a lid. = Pour in the apple mixture. Put on the lid, pinch sides to seal. cut off waste and use to make pretty pattern on the lid! = sprinkle some sugar atop the lid (maybe brush with egg yolk too) = bake it in the oven (gas 5-6) till the lid is crisp. Serve it with homemade custard yum yum If you feel lazy, don't bother blind baking the pie base - the base'll be softer after cooking rather than crispy. You can add some black cardamom seeds (crack open the pods) to the pastry if you want. YOu can add sultanas or blackberries to the apples in the pan if you want to, as well. Keeps 403 Posted April 11, 2011 Report Share Posted April 11, 2011 not the best recipe for diets, but I caramelise the applies rather than boiling them - fry apple slices in butter but not for too long (you don't want them to go to mush as the caramel will continue to cook them), then add brown sugar and stir, continue to cook for a few minutes until the sugar has melted and is bubbling. Then make your pie using this filling (use shortcrust pastry). Egg wash the top of the pie and sprinkle on more brown sugar for a nice crispy top. Just to add there's no need to blind bake pies at all, if you cook it for long enough in a not too hot oven (so it doesnt burn) the pie will not be soggy at all, but nice and crisp.
