dog fish / rock salmon any one eaten one?

hi all went out yesterday on a boat out of cardiff again, great day good weather but lots of dog fish about the boys had conger ,cod and dog fish ive never tryed a dog fish and fancey cooking a couple up just wondered if anyone eats them regular or got any recipes ?

 

also i know there not everyones cup of tea before i get slated but do fancey trying one

dog fish are nice but they are a pain in the ass to remove the skin. nail them to a plank of wood through the head slit behind the gills then pull off with a pair of pliers. just keep the recipe simple

 

 

 

You've hit the nail on the head, they are devils to skin: Its like sandpaper.

Once you have skinned them mind you, then just poach them in milk, with a bit of butter and thyme, maybe mushrooms.

Nice and simple. 'Huss' is another name for them i think.

One of my favourite fish cooked right got some defrosting as we speak.

 

1. skin them theres a good video on youtube. Once you learn the technique it only takes seconds.

 

2. freeze them for a month as they are part of the shark family so they piss through their skin and freezing removes the ammonia.

 

3. to cook egg flour and deep fry is my favourite or wrap in tin foil with some lemon, bay leaf, a few herbs and oven bake.

As already said deep fry chunks dusted in a light batter ,really nice i eat em regular when the other fish dont show.

 

Yep known as Rock and Chips. Just had a load for dinner along with mussels cooked in cider and a nice big fish pie. Was the nicest dinner in ages and cost almost nothing.
