Put seasoned butter under the skin on the breast, and massage it around, then put strips of fat bacon over the breast. Cook under tented foil and baste it VERY frequently. When the legs have slackened off remove the foil to allow the bird to colour. When a skewer in the thigh produces clear juices, it's done. But don't forget to allow the bird to relax after cooking [ back under the foil again ] for about ten minutes. Also, i think when you use a forcemeat stuffing in the neck end, the juices from that help to keep the breast meat moist.
