thenose 0 Posted September 30, 2010 Report Share Posted September 30, 2010 Makes about 4 small jars Take 6-8 decent size onions and job into small pieces and soften in a tablespoon of oil in a large pot over a mdeium heat. Add 2-4 (depends on taste and size) finely chopped dried chillis Add 2 cups of malt vinegar and 1 cup balsamic vinegar Add 1 cup of balsamic vinegar Add 3-4 bay leaves. Bring to the boil then reduce the heat and simmer for 2-3 hours until reduced and you can drag a wooden spoon across the bottom of the pan leaving a clear trail behind it. You can add extra ingredients like garlic, sultanas, little apple :-) Pot up into some clean a steam sterlised jars and leave alone for at least 6 weeks (if you can) Perfect with cold cuts and blue cheeses along side a nice glass of malt.
