If they're fully ripe when yellow, then they're probably greengages. taste like plums. They will do. Bullace, damson, greengage etc all belong to essentially the same genus; prunus domestica. There are varietal differences in colour and size, but you can pretty much class them as wild plums. Anyhoo, they're all good either stewed, or steeped in sugar and alcohol.
