mikeyblue 28 Posted August 29, 2010 Report Share Posted August 29, 2010 Hi All, I havent really cooked with rabbit a great deal. I have just deboned s two hind legs and diced the meat. I was wondering if there is an easy way of taking the membrane off as when I tried I made a right mess of it! Also will the meat still be tender if I cook with it on? As Stubby says abcess, or tape worm cyst which is jelly - like with tiny white balls in it.Abcesses are usually light cream in colour . Allways check out carcase before going further. Great advice stubby!! I have been checking you tube out for different ways to cook rabbit, think it was mark gilchrist or something, he soaked the rabbit in salt water for a cpl of hours, then cooked it for around two hours at which point the meat was that tender that it just fell off the bone. What do you think it was? hey up Mustard ,,,we used to get a lot of rabbits that came off sheep fields and quite a few rabbits had clear fluid sacs with white specks inside . we dropped some off at the vets who told us they were tape worm eggs as Stubby has quoted , the vet kept some sacs to show the students and he mentioned the rabbits were quite ok to eat just discard any fluid sacs but don`t let the dogs pick any up . the sacs could be found almost anywhere on the skinned carcass but mostly around the muscle area`s even just under the skin , so don`t be put put off from eating them ,rabbits that is . hope this is of use to you ,cheers,Ray. activeviii 8 Posted September 14, 2010 Report Share Posted September 14, 2010 soak in salted water overnight and then fresh water and salt into a stock pot, bring water and rabbits to boil and then simmer for 2 1/2 hours. i put a bouquet garni of herbs in with a few peppercorns as well. any thank that dont look right i just cut off and bin.
