matt_hooks 188 Posted August 25, 2010 Report Share Posted August 25, 2010 The money's in the preparation. A complete carcass takes a fair amount of work to turn it into saleable product. The price/kg is shockingly low still, but the dealer has to absorb a fair amount of waste in terms of bone weight that can't be sold on, and also the 2 hours or so of skilled butchery to turn a whole carcass into joints and cuts. It does rather annoy me when I see venison for sale at £20 plus per kilo, knowing the amount that the dealer will have given the hunter for it. Quote Link to post
