Recipe is: 3lb of marrow flesh after its been peeled and seeded 1lb of onion 1lb ripe tomatoes 1pint of vinegar 4oz sultanas 2 tsp allspice 2 tsp ground ginger 2 tablespoon salt 2 tsp black pepper 1lb brown sugar Chop marrow flesh into small chunks, peel and chop onions and skin and slice tomatoes (i blanch toms to get skin off easier) Put all this in large pan with half the vinegar and sultanas Simmer until soft an pulpy and marrow can be squashed Add spices, salt and pepper and simmer for another 15 mins Add sugar and rest of vinegar keep cooking until its thick Spoon into warm jars Enjoy! All the ingredients can be swapped for similar if thats what you want but this is my favourite! its so spicy. If you want you can also substitute the normal vinegar for sarsons pickling vinegar and dont bother with the allspice, i did that this time as i hadnt any allspice in as this vinegar is pre-spiced.
