Here is a great recipe from my old Granddad 'Connie the Fish' a real 'Old Romany Gent'. He used to cook eels this way for me when I was a lad. They tasted great back then and will again once the ban is lifted. 1. First catch an eel 2. Nail its head to a plank of wood or a tree 3. Slit it from its arse to its gills and clean out the cavity 4. Put some salt on your thumb and forefinger and pull off the skin from below the gill. ***It will come off in one piece. Peg this on the washing line and when dry use it to bind a wrist that is sprained - it works wonders. 5. Cut off The head and bottom of the tail and discard them. Then cut the body into 2ins pieces 6. Place in a pan with a finely chopped onion, salt & pepper a knob of butter and cover with milk 7. Bring slowly to the boil and simmer for ten minutes. 8. deanothehunter 34 Posted August 10, 2010 Report Share Posted August 10, 2010 most people boil them then leave them in cooking juice to cool and it turns to jelly the eels them selves are lovely but as for the jelly yuk i find cut into 2 or 3 inch portions pull apart sideways and if you can remove bone with sharp knife if not dont worry lay out on grill pan drizzle wiyh olive oil salt and pepper and grill on medium to hot heat for 5 to 10 mins works well with any fish especially boneless fillets its quick and they tatste great...........
