wanderinstar 1
We have all seen butchers and the like whipping a blade up and down a steel. It looks so easy. But when I have tried it, the blade ends up duller than when I started. How do you do it, correctly. Is there a certain angle you should use? Ian.

jimlampit 7
it only keeps the edge on a sharp knife. it wont sharpen a blunt knife any sense, when you have been using your knife ant it starts to blunt a little thats [bANNED TEXT] you use a steel to retain the cutting edge , when using the steel run your blade down it with the blade almost flush to the steel so its only rubbing on the smallest amount of the blade edge as this is were the blade edge will have burred over and the steel removes the of angled edge of the blade. and you dont need to many strokes either proberbly 10 or 12 each side.. hope this helps its much easier to demonstrate lol
