Keeping up to a knife with a steel.

We have all seen butchers and the like whipping a blade up and down a steel. It looks so easy. But when I have tried it, the blade ends up duller than when I started.

How do you do it, correctly. Is there a certain angle you should use?

i always thought it left to right of the steel,down strokes. If that make sence maybe if any butchers or abattoir lads, might know :hmm::thumbs:

it only keeps the edge on a sharp knife. it wont sharpen a blunt knife any sense, when you have been using your knife ant it starts to blunt a little thats [bANNED TEXT] you use a steel to retain the cutting edge , when using the steel run your blade down it with the blade almost flush to the steel so its only rubbing on the smallest amount of the blade edge as this is were the blade edge will have burred over and the steel removes the of angled edge of the blade. and you dont need to many strokes either proberbly 10 or 12 each side.. hope this helps its much easier to demonstrate lol

PERSONALLY ,

 

I USE A SET OF VERY GOOD QUALITY STONES AND THEN POLISH WITH A LEATHER STROP OR FELT WHELL ON THE GRINDER WITH LINISHING PASTE ...... DEPENDING

BUT THEN ...... I LIKE A KNIFE TO BE AS SHARP AS A RAZOR

 

SOMETIMES .........

 

YOU HAVE TO BE CAREFUL HANDING THEM TO OTHERS .......

 

ONCE WHILST OUT FERRETING WITH A NUMPTY HE ASKED FOR MY BLADE , HE WENT TO LEG A RABBIT ...PUSHED THE BLADE THROUGH THE HOCK AND STRAIGHT THROUGH HIS HAND !! ..... THAT CUT THE DAY SHORT WITH A TRIP TO THE HOSPITAL :bye:

 

SOME PEOPLE SHOULDNT BE ALLOWED SHARP OBJECTS .... I BELIVE THAT PRATT NOW EATS WITH A PLASTIC KNIFE AND FORK :doh:

i meet man in Harrogate to cut grass field last week, his home built from best stone i ever see,yorkshire stone he say. I ask 'can i have broken stone ' from house. He give me, is perfec for knife sharpen, i wet stone , thin blade & knife good to shave after rub with steel.

 

practice, is make perfec. :thumbs:
