We took the dog out for a walk earlier and there were loads of big light coloured snails about, they look very similar to the ones you get in France on a plate. Now I have had these a few times and I know they taste of mud and garlic but they are not bad at the same time and a bit of fun to eat.

So does any body know if these native Surrey snails are edible and how do you prepare them?

Most snails are edible, the ones we get in the UK are more or less the same as those in France.

They do need to be cleaned before eating not just the outside!!

You have to keep them on a feed of things like bread and milk and then something like flour until you get everything in the digestion system out, and any discharge is white (from your cleaning diet).

Its been a while since I have done it but thats the gist of what you do.

Just feed them on organic lettuce for about a week in an old fish tank or anything where they cant escape so something with a lid, make sure it has air holes though, and when they are ready boil them until ready which should be only a few minutes, pull them out (more of a twisting action with a coctail stick) and then a bit of garlic butter and then reheat (I like it with a bit of oil) and the you should have some tasty snails :)

All the best,

That's what I'd do if I was brave enough to try them! I used to work in an Italian restaurant in my teens, and that's precisely what the chef told me to do with them. Plain old garden snails in a bucket (with a lid!) full of lettuce for a few days.

They are nice if you want to give it a risk, but if you cook them properly then their is no risk of getting lung worm off of them, or anything else they carry.
