Gin 498 Posted January 31, 2010 Report Share Posted January 31, 2010 (edited) November, to into February is the best time to cut. Hazel growing in rocky areas are slower growing and a harder stick when seasoned. Cut longer than you will require, seal the ends, i found knotting sealer to be best, and tie them together and season standing up ( never lying down as sap can burst through ). Cut a bit thicker shanks to allow for up to one third shrinkage during seasoning. Season for at least one year.As your Ireland,- best place i ever saw for shanks was Rostrevor Forest, in N-Ireland.
