adam1 2 Posted January 19, 2010 Report Share Posted January 19, 2010 I,ve just got a new permission with plenty of hares, having never delt with one before I would like to know how to deal with them properly. Firstly I presume you de-pee them right away like rabbit, but then how do you hang them as I've read a couple of conflicting things, do you hang with the guts still in or do you gut then hang? I presume time span is down to personal taste and tempreture? Hang by back feet? Once its been hung would you soak in salt water like rabbit or is hanging doing the same job? watchman 256 Posted January 19, 2010 Report Share Posted January 19, 2010 it has been said that in the past they would be hung by the back legs for anything up to ten days,weather permiting,with the guts in,and a bowl under it to collect the blood,good gravy thickener,this is dependant on how strong you like it,i personally gut straight away as with rabbits and eat within two days,anything longer and i dont think i could stomach it lol,its all down to preference mate,if you can get that many,trial and error until you find them suitable for your own taste Quote Link to post Share on other sites

I used to get a headache after eating hare that wasn't pre-soaked and soaking seems to remedy the problem. I can only assume it's because a lot of the blood is leeched out into the water and so I must have some form of intolerance to the blood. Anyone else experience this?
