It was THE tastiest side dish I've had this year, here they serve it as a kind of chutney like side dish to game and meat pastry...the receipe is simplicity itself so I'll put it up: - 500 gms red onions in thin slices - 20 gms butter - 100 gms sugar - 150 ml red wine - 1 tablespoon balsamico vinegar - (some rosemary is optional) Take a thick-bottomed pan...put the butter in and brown slightly...next put the sugar in and heat on a medium fire until the sugar starts colouring...then put in the onion rings...stir well and keep the fire low...after 10 mins or so add the red wine little by little...and then add the vinegar...let simmer on low fire for 30 mins. Pour in real clean glass pots when still hot and put in fridge...it will keeps for a couple of weeks at least when nicely air-thight... L. Quote Link to post Share on other sites
