Gimli 0 Posted December 29, 2009 Report Share Posted December 29, 2009 Having a great day today, watching England hammer South Africa at cricket while having a beer and chewing on homemade venison biltong. I've got loads of fallow after two productive stalks in late November and early December. My son bought me a biltong maker for Christmas and I've just turned a kilo of leg meat into very good biltong - took about 12 hours marinating and then draining, then 24 hours in the biltong maker. Great machine, will take 5 kg at a time. I over-did the chilli spice mix and so it's a touch salty and too spiced, so masking too much of the flavour of the meat, but still tastes good. Will do another lot with a bit less spice. Would recommend to anyone who likes biltong - he said he got it from biltongmaker.com Quote Link to post
