The ageing takes place in the cask, so a 10 year old whisky has matured in the cask for 10 years. Once it's in the bottle it makes no odds how old the bottle is. And yes, the older the better. If you're feeling flush buy yourself an 18 year old Macallan. Remember that putting anything but water in a single malt is a capital offence for which you can be hung drawn and quartered.
