Hve a luk at this link Sounda it will give you some idea ;)http://www.bestpracticeguides.org.uk/carca...isonSupply.aspx

On the guides tab on the left you`ll find the carcass preparation tab you need to pay particular attention to "Venison Supply 1"

I supply venison to several dealers and the requirements vary from each but they all insist on a correct and clean Gralloch of the beast as well as carcass identification (ID tag) which you`d expect.

Quality control for meat entering into the food chain has to be of paramount importance as i`m sure every one will agree. So its important that the Hunters that are submitting carcasses are properly trained with the appropriate paper work to carry out the initial visual inspection. You may need a DSC 1 or 2 registration number.

Head and feet off are a mandatory request but i must stress this should not take place at the carcass extraction site for obvious reasons.

Clean transportation is expected and your half way there, prices may vary from place to place.

Most of the time when they stress that the beasts should be neck or head shot what there really saying is they don't want carcasses with either legs, shoulders, spines mangled up.

Or beasts that have had there stomach contents emptied due to either bullet impact or shock wave causing the carcass to become contaminated.

They shouldn't mind beasts that have been clean shot straight through the ribs ;) But if you do choose to neck shoot i can only suggest that you bleed the carcass out immediately and correctly..
