a nice game soup,pheasent,partridge,rabbit,hare and mabe a touch of venasen sounds nice atb mate

 

add to this a good slug of fairly decent red, some herbs (rosemary, basil and ginger fresh or ground) and season to taste. If you really want to push the boat out make the stock out of any bones (I usually use rabbit and pheasant carcase [pheasant stripped of meat] boil it up remove the rabbit meat. Strain the liquid and use it as the base for your soup. If it turns out not thick enough for you then just add cornflour paste, a roux (flour and butter) or tomatoe puree but this will add another flavour.

* 400 grams (about 1lb) boneless chicken meat diced

* 3 cups chicken stock

* 100 grams (3.5 oz) straw mushrooms, halved 6 cherry tomatoes

* 1 fresh lemon grass stem cut into short lengths

* 2-3 kaffir lime leaves, torn

* 3 tbsp Thai fish sauce

* 4 tbsp fresh lime juice

* 1/2 tsp sugar

* 5-6 hot fresh Thai chilies, just broken with pestle

 

Preparation

 

Place the stock in a pot, add the lemon grass and kaffir lime leavess, and bring to boil over medium heat. Add the chicken meat, mushroom, fish sauce, lime juice, and sugar; cook slowly and uncovered for 10 minutes. Do not stir. Then add the tomatoes and chilies and cook for 5 more minutes. Remove from heat. 4 servings.

 

I've ripped this from the net. This is my favourite soup substitute chicken for rabbit or whatever and to beast it up add guay teow (boiled and drained egg noodles) enjoy...

Having ham shank for tea so i use the water off the shanks,add carrots,onions,got some beetroot out the garden so thats going in aswell,lentils,barley,potatoes,bit of the shank,salt pepper,pinch of herbs which ever comes 1st out of the cupboard,3 drops of tobasco sauce,chicken oxo....boil for ages,,bobs your uncle lasts me a couple of days...tastes better 2nd day ;)

can't wait to see the colour with beetroot :D

Having ham shank for tea so i use the water off the shanks,add carrots,onions,got some beetroot out the garden so thats going in aswell,lentils,barley,potatoes,bit of the shank,salt pepper,pinch of herbs which ever comes 1st out of the cupboard,3 drops of tobasco sauce,chicken oxo....boil for ages,,bobs your uncle lasts me a couple of days...tastes better 2nd day ;)

can't wait to see the colour with beetroot :D

A bit,give a quick blitz and the lentils thicken it a little,the colour didn't go the colour i expected more like a minestrone now,so i put a bit of spaghetti in broke down into 1" lengths,tastes alright...just got 3 pints of it to get through :D

Not a bad soup for the price of 2 spuds and an oxo cube ;) the rest of the veg came out of my 6'x1' allotment :D

I have to agree it tastes better next day, come to say that pies and pastries do as well.

 

Although cheese scones don't last two minutes once through the oven door. ;)
