indiana 1 Posted September 29, 2009 Report Share Posted September 29, 2009 In a covered baking dish chop up onions, a carrot or 2, and a stalk of celery. These chopped vegetables need to be almost an inch thick on the bottom of the baking dish. Now, place the cut up squirrel in the mixture of vegetables. Add unsalted beef broth untill the squirrel pieces are almost half covered in broth. Cover the baking dish and put it in the oven at about 300 F. Let it be for a couple hrs then uncover to reduce the stock. when you are reducing the beef broth down you need to watch it closely to keep it from drying out.
