Gut them and I wire them to the side of the cage on a shelf with no saw-dust/paper/bedding which reduces the amount of stuff that gets stuck to the rabbit. The shelf can also be removed and cleaned in a couple of minutes if necessary.

Leave skin on.

Just throw my rabbits in with fur on, paunch them in the field before I fetch them home, I think its better to leave the fur on so it stops your ferrets having to eat so much of the shavings, shavings stick to the fur and not so much to the meat :)
