Wexfordlee 0 Posted September 1, 2009 Report Share Posted September 1, 2009 has anyone any simple plum chutney recipes Depends on the quantities mate but if you keep your flavourings to bay leaf, cinnamon and clove, you cant go wrong in my opinion. just add as little or as much red wine vinegar/sugar as ya want with onion and garlic and stew down. SPICED PLUM AND LIME CHUTNEY 2kg cooked plums, stoned and roughly chopped 2 large onions, finely chopped 5 cloves garlic finely chopped 2 fresh green chillies, deseeded and chopped (go for red if you want to) Grated rind and juice of 2 limes Grated rind and juice of 1 lemon 2†of fresh root ginger, grated 600ml red wine vinegar 500g Demerara sugar 2 cinnamon sticks 25g Allspice berries 1 tsp black peppercorns Put the cooked plums in a large pan with all the other ingredients except the cinnamon, Allspice berries and peppercorns. Grind the cinnamon, allspice and peppercorns to a powder. Add to the pan and bring slowly to a boil., stirring frequently until all the sugar has dissolved. Simmer uncovered for 1 ½ - 2 hrs until thick. VARIATIONS Substitute Damsons for plums Replace the Allspice with 2 TBLSP coriander seed. Quote Link to post Share on other sites
