jigsaw 11,891
A private estate in Munster is overrun(the owners words not mine)with fallow and need to be sorted I was told,so I organised a day out and a pricket was taken. It ended up on my table and I attempted to butcher it with the help of youtube.i bought a sabresaw and what ajob it does to quarter and seperate the carcass. It goes through the leg bones like butter and the spine is no problem either.I can split it down the centre in seconds. One question I have to ask is,how would we be fixed if stoped by the police and a deer found in the van.I have written permission to take them which I carry on my person when i accompany my mate.Legally are we ok to take them?We counted 15 deer on the roadside driving into the estate the first day.I saw a lot of hinds with fawns so we cant do much more till october. The owner is adamant he wants a lot of them culled and the best part is no one else is allowed on the grounds, not bad eh?Heres afew pics of my efforts. TOMO 26,677
ITS ALWAYS EASIER TO DEAL WITH THE MEAT IF ITS CHILLED PUT THE THE BIG QUATERS IN A CHEST FREEZER FOR AN HOUR OR TWO , THEN WHEN IT COMES TO TAKING JOINTS OF , RIBS , CHOPS. ITS A LOT EASIER TO DEAL WITH , WHEN ITS WARM OR AT ROOM TEMP , THE MEAT SLIDES ROUND TO EASY. ALSO A WOOD TABLE IS EASIER . SALT GETS THE BLOOD OUT THE WOOD AS WELL

jigsaw 11,891
and tomo, the best thing is theyre cheap as chips.10-15 seconds with a steel cutting blade and the carcass is halved, then quartered and then out with the knives and finish the job in no time.if you handle a few deer each season, buy the saw.
