Eat with plenty of brown bread and butter with a good twist of a black pepper delicious!!! Or stuff the cavity with herb's ( rosemary and bay are quite nice with trout, or if you can find some wood sorrel thats nice too) and a wedge of lemon wrap well in tin foil and bake in a oven or on the coals of a bbq. BellySlater 15 Posted July 30, 2009 Report Share Posted July 30, 2009 Leave whole and clean out. Stuff the cavity with rosemary and lemon slices, sprinke of sea salt on the skin. Wrap in foil (like a bag / tent) and sling it on the barbie for half an hour or stick it in the oven. You can add a slug of white wine and it will steam rather than bake. tynetyke 0 Posted July 31, 2009 Report Share Posted July 31, 2009 all sound nice so far you could fillet and smoke them like this get yourself a biscuit or sweet tin and stab a few holes in the lid then stick a hand ful of oak shavings in the bottom next get some fine mesh which you can bend by hand and shape it into your tin so its sits about an inch off the shavings remembering to leave some room for your fillets of trout place your fish on the mesh then put the lid back on the tin and put it on a medium gas hob for about ten mins or till its done to your liking (you can keep checking with a fork by flaking away some flesh ,aslo best do this on a campimg stove in the garden so your lass doesnt kick off for smoking the kitchen out and setting the alarms off) best served with a crisp fresh salad and some crusty bread now i,m no rick stein but thats how i like it and it works for me Quote Link to post Share on other sites

mushroom 13,252 Posted August 4, 2009 Report Share Posted August 4, 2009 crush a few almonds and put in a dish add dried rosemary, black pepper and a pinch of oregano (just a pinch or it will taste sh1t) crush again with pestle and motar. Then add about two tablespoons of honey (take your pick i like light honey).
