my young dog

I've not done it before but ive took a young untrained dog on hes a 12 month old collie/greyhound x deerhound/greyhound hes realy fast and jumps awsome but i dont know how to train him my good dogs tied up with a poorly leg so im taking him out with a not so good bitch ive got....hes been watching for a long time now but when i slip him on some tackle he wont run to the beam he just gos anywere but in the right direction...also hes realy well behaved at home but as soon as hes in the field hes a prick...very keen but i carnt say thats a bad thing...can some one help me please.
