Bought her a new bag, and a new belt as a surprise present, at least the fcuking hoover should work better. Seriously, we don't celebrate christmas and haven't done for years, son and grandkids are out in Aussie, don't have anything to do with my siblings so it's just me and her. We'll be having a duck for lunch and she's bought a tiny turkey cos she likes the taste of tissue paper, although me and the dog will share the skin giblets and arse. We used to have 3 butchers in the high street and one in Well Hall, they have all gone now, even the wet fish shop closed down. One of them was sold to another butcher but he only lasted a short while. He wasn't making enough and his prices crept up and up, which in turn had an adverse effect. People were shopping at sainsburys and iceland and later Lidls, where everything is all under one roof. I'd say that if you are opening a butchers shop you need to have other shops close by, greengrocers, bakers, grocer etc. I can't see Mrs. Nicelady driving to the supermarket to get her shopping and the

Certainly knocks my 'beans on two toast' into a cocked hat. Don't know what possessed me to have that earlier as there's plenty of bacon, eggs, black pudding, mushrooms and tomatoes available.

The real ones are even more impressive, but it doesn't pay to get too close to the big surly fcukers LOL, they let you know when you are a bit too close.

Got a few photos of carvings which I took on a few visits to Aussie. Excuse the presence of the grandkids. A few from William Ricketts sanctuary in the Dandenong mountains (fcuking place was full of spiders and webs, and it's best not to mess with Aussie spiders) A nice carving from Melbourne Zoo And a couple from the Healesville Sanctuary, Victoria.

We see it a lot from our local co op, and it's not always noticeable until you have opened it and turned it over. As it's for the dog's evening feed I just cook it in some olive oil and add some biscuit. It does him no harm and in fact he enjoys it. Have also taken back in date chickens which were off, and even a couple of shoulders of lamb which were off. Have had prepacked bacon off as well, I don't trust their meat at all now. That said, the wife always goes about the same time each evening and brings back lots of things which have been drastically reduced, only thing is that it's stuf

I must admit that I still have a small manually operated fleischwolf meat mincer which is about 40 years old and I still use it regularly rather than set up the Reber for a small mincing job. -

A sad story A couple of years ago, one night I was about to propose to my girlfriend when my room mate Joseph barged into the room out of nowhere, tripped and fell over, breaking a glass table with his face. It totally ruined the mood. I didn't know Joseph that well, don't even remember where he was from, but let's just say I put my plans on hold to help him through his injuries. Head and tail are both worth using. I watch Diners, Drive Ins and Dives a fair bit and the other week Guy Fieri had a bowl of pig feet and pig tail stew, and it looked really nice. Head is good to use for brawn/head cheese, bath chaps and braised pig cheeks, have a look on youtube at Scott Rea's site. Alternatively you can grind it in with your sausage mince. Slowly roast the ears as a treat for the dogs. -

Yep, post it up, I do like to see different methods and uses for the pig. I've made Italian sausages and Sardinian but they were from commercially available mixes so possibly not authentic, also made salami a few times. -

I like a decent pasty as well, but home made. Made a hunters chicken one a few weeks ago, was my largest to date, and so tasty with the bacon and the cheese in it, really should have taken a photo.

It was part of my early teens as well, interspersed with paper rounds. Had a couple of milk yards quite local to me and you just turned up early (well early) and asked if anyone needed a hand. If you were efficient they would ask you to help on a weekly basis but if you let them down once, you were gone. Used to enjoy it and the cash came in handy.
