There are that many good quality guns on the market for a grand or less and I gree with Walshie in terms of a cheaper gun is not a worse gun.
I would get to a good sized gun shop and see what feels right to you as I think fit and balance are more important that make and gizmos and fancy wood/ finishes.
I would stick with OU (single trigger multi choke) for first gun- the extra shot in a semi is not that much of a bounus and if you ever got an invite or joined a syndicate a semi is no good.
Odd request but if you really want one why not get intouch with a game dealer or deer park.
My dogs love the rib cage, bones and trimmings of roe I shoot but would not waste a whole deer on them unless it was RTA.
Had a hawke endurance and it was ok, but the optics faded early on at dusk. Now use weaver and bushnell elite and find them a lot better compared to the hawke for not a lot more £ than a new hawke.
Hawke are a bit gimmicky over quality I think

.308 ticks all the boxes and meat damage may not be as much i my experience as it is with smaller faster calibers (i.e 22- 250).
I have .222 and 308 but if only had 1 it would be the 308.
