Hi all, did anyone watch Jimmy's Traditional Christmas Dinner program ? He compared the Maris piper with a variety used in the early 1900's. Can anyone remember what it was called please. Regards Dave

Pheasant pasty, I had a few friends stay with us over night in order to join some local guns for a days shooting, all needed feeding and traditionally it was my job to supply lunch. I had previously made game pie, sausages ect but I had been looking at the urban fieldsportsman site he has a great recipe for rabbit & pigeon pasty ( highly recommended ) I decided to to try this, followed it to the letter pastry and all but substituted the rabbit & pigeon with pheasant, they sold like hot cakes. I had made 30 which were wolfed down by guns & beaters. Give them a try, i don't think

Snack/starter, this is something i do occasionally, partridge dippers Ingredients Partridge breast Flour Paprika Salt Pepper Olive oil Dip Fish sauce Garlic Red chilli Grean chilli Shallot Sugar Season the flour with the salt, pepper, & paprika in a freezer bag blow the bag up & shake. Cut the partridge breasts diagonally into thin strips place in bag blow & shake again until covered, fry in the oil 1 or 2 mins will be enough. Finely chop garlic, chilli & shallot mix into the fish sauce along with the sugar. Obviously you could use any sauce as a dip

the biggest problem with squirrel is they don't like parting with there skin but if you're buying them from the butcher (why?) that should be done for you. i've done the squirrel stew thing which was fine but there is a lot of sinew/catilege in the back legs. last time i wraped the sadle & back legs in foil seasoned with black pepper sea salt & as much olive oil as you can get in cook in the oven keep an eye on it, the meat will fall of the bone.you can then do what you like with it, i made it into a pasta dish.bon appetite

farhaj i think you,re a wind up but if i,m wrong forgive me. stop going on about dough balls give it up forget it, you,re fishing for predators they don,t eat bread take the advice you,ve been given fish baits/ lures used efficiently you will catch. let us know how you get on post pics of your exotic catches regards dave -
yes beefx3 you've just made it dawn on me, why stop at duck go for it, rabbit, pheasant,pigeon, ect. i understand your concern regarding colour that would make me think but you can buy chicken livers in the super market probely reared in appauling conditions i bet no one checks the colour of them, i've never fancied them but something wild is a different matter. i love nothing better than shooting an early morning roe then having the liver for breakfast, colour is not an issue but flukes, although flukes are species specific so won't harm you if found it means removal a very good cook a very

I used a beer making kit about 20 years ago and in truth it wasn't great but I just brewed 5 gal of young's harvest mild, drunk cold from the fridge it's excellent its a dark mild with a hint of treacle/chocolate. I would like to try either cider or larger from young's has anyone tried these any recommendation ? Thanks Regards Dave

Once a year I gather a dozen or so pheasants from beating and shooting days in order to make sausages. At the end of the Boxing Day Shoot the keeper said the game dealer was away for Christmas so we could take what we like. Well 7 brace will do. I cut the breasts and some of the leg meat from the birds and minced this along with 600g of smoked and 600g of unsmoked streaky bacon. This produced approx 15lb of mince. This was seasoned with 3tsp salt, 2tsp white pepper, 2tsp garlic granules, 1tsp chilli flakes, 2tsp sage, 2tsp thyme (use mixed herbs). I added 3 finely chopped onions and mixe

had a great trip out of plymouth last april. it was my mate's stag weekend, we had a good mixed bag pouting, pollock,ling,haddock,whiting & conger to about 25lb. bristol channel fishing well for cod a mo.went out last week 31st nothing big but good eaters.can't remember the last time i was that fcuking cold. fish to 26lb have been caught over last month. get down there & fill your boots dave

Acuspell, there's nothing tactical about my trap setting. the river i trap comprises shallow runs and pools so there isn't much of a choice. i live in the cotswolds i only have one river near by holding these aliens. cotswold water park, colne valley, thames, lea valley are just some areas where signals are a problem. there are many more. happy new year to all, good hunting for 2012 dave

In country's where the control of cormorant is legal, one method used is to hook a fresh fish with a treble, tie this to a strong line, tie the line to a brick or rock. Place this on the edge of an island or on a platform over the water. Cormo takes the bait and down she goes. Thinking about it this may be good for otter as well. All this may be of no use if your mate's lake is over here as this is not legal in the uk. Dave

Hello all, I put my traps out for 24hrs back in sept. I hadn't trapped this stretch for about a year it's a small river 20-25ft wide. I had 10 out baited with trout pellets. First one was in a pool about 20yds up a little side stream pulled it out NOTHING well two minows.I couldn't believe it this river is crawling with them. I was also surprised with the second one it was full 37, I just had to count the third 67 this is nuts! It's incredible how this alien creatures has overrun our waterways. Cooking, if you have industrial kit like stubby no problem but I find the crays body mass knocks
