Cant beat DUCK WITH MUSHROOMS AND SHERRY. ok here goes, 75g butter 225gmushrooms 1 duck 3tablespoons flour 450ml stock(chicken or veg will do) 75ml sherry salt and pepper watercress Melt half the butter and cook the sliced mushrooms for 10min. Season lightley and leave to cool. Stuff the duck with 3/4 of the mushrooms. Brown the bird in the rest of the butter and put in a casarole dish. Blend the flour into the pan juices and gradually work in the stock and the sherry. Season well and pour over the duck.Cover tightly and cook in the oven at 170oc or gas mark 3 for one and a half h

  15. ok here goes a recipe that i enjoy! for Rabbit in Cider you will need- 1jointed Rabbit 4large onions 1bay leaf 1 sprig of thyme 50g of chopped bacon 225g of peeled sliced tomatoes 300ml or half a pint of cider salt and pepper. Soak the rabbit joints in salted water for 2hours and dry well. Fry them until golden in a little fat and then add the sliced onion. Cook until soft then add the bayleaf and thyme,bacon and tomatoes, and simmer for ten minutes Pour on the cider and cover the pan. Simmer for 1hour.
