  3. This is one I love. It is best to use young rabbits for this recipie, as they do not take as long to cook. Take 3 or 4 back legs of rabbit wrap in smoked streaky bacon place in a dish on a bed of mushrooms and onions. Or you can just use the back legs and saddle as I have here. Cook over a moderate heat for 35 minutes or untill the bacon is crispy. Take the legs out of the dish and drain all the juices that are in the dish leaving the onions and mushrooms.   6. Don't know if this has been put forward before? How would people recieve the thought of interviews with different people on THL. A sort of hunter of the month thing where people could put forward questions to 'The hunter of the month' Like asking Phill Lloyd if they had cars when he started hunting? Allright that was a joke, but you get the idea. The name of the hunter would be put up (with thier agreement) and then people could put forward questions to ask them on their repective niche of hunting.   7. About 25 years ago two mates travelled a 100 odd miles to run a place that was teeming with rabbits and hares. So the story goes they had run quite a few rabbits and hares and had quite a good bag. They were running two dogs, doubled up on the hares and single on the rabbits. They had done a big circle and were in the last field before the car when they slipped both dogs, one a whippet the other Ibezan x whippet on a hare.   8. The first rabbit I boned out ended up in the ferrets I used the video above to do the second one, and it was a lot better. The third one I done I wrote down key methods from the video and had it beside me when I boned the rabbit out. It was a lot easier as I knew where I had to go next. Something like scrape ribs, cut along backbone and cut through back leg hip joint, Just pointers what you should be doing next. I still have to use the notes but am getting better at it. As long as you get most of the meat off the bones it does not really matter what it looks like inside, as that is rolled
  9. Used 2 crusts and a plain slice of toasting loaf, to make the breadcrumbs 2 small onions and 2 cloves of garlic blitzed in the blender, added those to the breadcrumbs. Then added some herbs (whatever was at hand without having to dig in the cuboard). This week I done the same but blitzed half a dozem mushrooms in the blender and added those as well. Next one I do I will make a force meat stuffing with a couple of pigeon breasts and some sausage meat, that should be intresting. TC

  14. It really depends on the age of the goose. Young ones are nice just roasted whole or the breasts taken out. The best way with the old birds is place it in a very large roasting tin half fill the tin with water and place a brick beside the bird. Place it on a low heat for 4 or 5 hours. Then throw the bird away and eat the birck as it will be more tender than the goose. :thumbs: TC

  16. One of my favorite ways of eating pigeon is to stuff the breasts with a garlic and herb stuffing then coat in breadcrumbs. You can either shollow fry or grill them but I like them out of the JML. Make a pocket in the breast just big enough to get your thumb into. Once you have done that make the stuffing, I used two slices of wholemeal bread one medium red onion some fresh parsley, dried mixed herbs and three coves of garlic. Stuff the breasts with the stuffing mix.. Or you can even stuff them with cheese, I like Stilton in them. Then dip them in flour, coat th

  18. They are brilliant would not be without one now. We have a duel fuel range cooker and the oven is the size of the cooker Great for xmas can get a 20lb turkey and a goose in at the same time.But fecking useless for cooking a chicken it takes half an hour to reach tempreture. The JML is brilliant anything an oven or grill can do you can do it in the JML, it saves a fortune in electricity as it is almost instantly up to tempreture and cooks quicker than a normal oven. The only down side is you are limited to the size of the meat you can use it for. TC
  19. Had a hankering for rabbit today, but wanted something different. So I had a deboned rabbit and stuffed it with smoked bacon and a garlic and herb stuffing. The deboned rabbit. A layer of smoked bacon placed over the top of the rabbit meat. Then a layer of the garlic stuffing layed over the bacon. Rolled and skewered ready for the oven. Two hours in the JML @ 175c. It really tastes great, the bacon fat has kept it moist. Best of all though is not a bone in sight. Enjoy. TC
