ellir0305 9 Posted August 2, 2009 Report Share Posted August 2, 2009 after catching my first proper sized rabbit in the fenn traps i figured i would have to do something good with it. so after gutting and skinning the bunny i decided to brine it fo 3 hours in a mixture of sugar, salt, soy, ginger, garlic, chilli, sherry and water. i hot water smoked it for an hour over apple wood smoke. believe me it is awesome. ifyou want any hints and tips give me a pm and i will put the pics up some point. so working in a smokery has finally paid off atb rob Quote Link to post Share on other sites

ellir0305 9 Posted August 2, 2009 Author Report Share Posted August 2, 2009 dosent sound bad at all mate give it a go mate you can make a water smoker out of a barrel, with a bowl on the bottom to burn the fire in another bowl above this to fill with water, this generates steam and keeps the meat moist. then above both of these a grill on which to place the food. burn a barbeque style fire in the bottom with plenty of charcoal and add green prunings of apple wood or similar to the fire to generate smoke.
